Directions :
Marinate lean pork for 30 minutes.
Heat up dry wok; fry the old ginger over low heat till dry. Add in sesame oil and fry till golden brown. Dish out half-portion and set aside. Add in the lean pork into wok and stir-fry for a while, dish out and set aside. Pour the rice wine, yellow wine and filtered water into the wok and bring to boil till alcohol is evaporated. Add in meat and boil for a few minutes. Add in the light soy sauce, brown sugar, fried ginger and sesame oil. Ready to serve.
Seasoning :
Light soy sauce, brown sugar and grounded white pepper (to taste)
